Easy Dinner Recipes for Your Family

Between work, housework and helping the kids with their school work, parents often have a hard time getting dinner on the table. When you add in extracurricular activities and sports, it's hardly surprising that many are tempted just to hit the drive-through when hunger strikes. You don't have to avoid it altogether, but eating too much fast food plays a negative role in your overall health, as well as the health of your teeth. Putting together a repertoire of easy dinner recipes and keeping the ingredients on hand is a simple way to ensure that you can always get a healthy meal from counter to table in no time. Here's a few suggestions to get you started:

Salad

Making a salad requires little to no cooking. Start by chopping lettuce or spinach. Dice and throw in any other vegetables you have in the refrigerator - tomatoes, bell peppers, cucumbers, zucchini, carrots, peas, radishes, and celery are all tasty options. Toss in some leftover chicken, steak, or fish for additional protein. If you want to avoid meat, or don't have any on hand, remember that beans also contain protein; try black beans and corn for a Latin inspired salad. Adding a bit of shredded cheese ups the calcium content in your salad; calcium is a vital nutrient for your teeth and helps promote their health.

Rice

Cooking a large batch of rice and keeping it in the refrigerator gives you the base for an easy dinner recipe any night of the week. Steam a bag of mixed vegetables and stir them into warmed rice. Add shrimp or sliced pork and top with a bit of soy sauce for an easy version of your favorite takeout. Rice also pairs well with fish. Mix together a bit of grilled salmon, a cup of peas, and rice for a quick and healthy dinner. You could also combine pinto beans with rice, shredded cheese, and diced avocado and roll the mixture into a flour tortilla.

Eggs

Eggs are versatile and easy to make. They are also full of protein and other nutrients that are important to your health. Scramble a couple of eggs and top with cheese and salsa, then wrap in a tortilla for an easy breakfast burrito that makes for a quick dinner on a busy night. Another easy egg dish to try is quiche. Scramble about eight eggs, then stir in any vegetables you want to add. Pour into a prepared pie crust and bake at 350 degrees for about 30 minutes, or until the eggs are set in the middle. Top with a bit of shredded cheese just before serving. Lastly, you can also just fry up a couple of eggs and serve them with toast and fruit.
