Basic Brunch

 

 

Cheese Grits

             ( Serves 4)

 

 

Ingredients

 

3 cups chicken broth or stock
1 cup old-fashioned stone-ground grits*
1/2 cup heavy cream
1/2 cup extra sharp Cheddar cheese, grated
1/2 cup Mascarpone cheese
Salt and freshly ground white pepper to taste







Preparation

 

Bring the broth or stock to a boil in a heavy pot or saucepan. Slowly pour in grits, stirring constantly. Reduce heat to medium low. Cook until thickened, stirring occasionally. The grits will absorb all the stock and become soft.

 


Add cream and cheeses, stirring frequently. Season to taste with salt and white pepper. Keep warm over low heat until ready to serve. Use warm broth or stock to thin grits if necessary.

 

*Quick-cooking grits may be substituted.
