Turkey Sausage

Ingredients

1 pound ground turkey
1/2 teaspoon salt
1 teaspoon ground pepper
1 tablespoon finely minced sage
1/2 teaspoon ground thyme
1 teaspoon fennel seeds
1/4 teaspoon cayenne pepper
1/2 teaspoon seasoned salt
1 tablespoon olive oil

Preparation

Using your hands, knead all the ingredients together. Form into patties or loaf, refrigerate at least 1 hour and up to 24 hours. (If not used immediately, fresh sausage can be frozen for up to 2 months).
In a nonstick or iron skillet over medium heat, add one tablespoon olive oil and patties, cook for about 3-4 minutes on each side, until browned and cooked through.

Gravy

Ingredients

Turkey sausage, cooked
1 tablespoon olive oil
2 tablespoons flour
1 cup chicken stock
11/2 cups fat-free evaporated milk
1/4 cup water
Salt and pepper, to taste
1/2 teaspoon fresh sage, optional

Preparation

Crumble the sausage patties into a bowl and set aside. In a large nonstick or iron skillet, heat oil over medium heat. Add flour and stir until lightly browned. Slowly add the chicken stock, and then the milk, stirring. Add water, smoothing any lumps with a wooden spoon. Serve over biscuits.
