Cornbread
Apple Cobbler
Ingredients
5 large firm apples, peeled, cored and sliced
(Golden Delicious, Gala)
2 tablespoons unsalted butter
3/4 cup firmly packed light brown sugar
1/4 cup dark rum
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
Cornbread topping
1 package golden corn muffin and bread mix
1/3 cup milk
2 tablespoons melted butter
1 egg

Preparation
Preheat the oven to 375 F.
Grease an 8-inch round or square baking dish.
Melt the butter in a skillet.
Add the apples, brown sugar, rum, cinnamon, nutmeg and ginger.
Stir gently with a wooden spoon cooking the apples until just tender.
Pour the apple mixture into a baking dish.
For the topping, place contents of one package of cornbread mix into a
medium-size bowl. Add the milk, butter and egg.
Spoon the cornbread mixture on top of the apples, covering
them completely.
Bake the cobbler 20-25 minutes or until the cornbread
crust is golden brown and cooked through.
