Moroccan
Spiced Grilled Lamb Brochettes
(
Serves 4 )
Ingredients
1/4 cup olive oil
1/2 cup dry red wine
1 tablespoon ground cumin
11/2 teaspoons curry powder
11/2 teaspoons ground coriander
1 teaspoon salt
1 teaspoon freshly ground pepper
2 1/2 pounds lean boneless leg of lamb cut in 1 1/2 inch cubes

Preparation
In a large bowl, combine olive oil, wine,
cumin, curry, coriander, salt and pepper. Add the lamb,
toss to coat and marinate for at least 1 hour or up to 24
hours, tossing occasionally. Drain the marinade and let
the lamb air-dry. Prepare a medium-hot charcoal fire or
gas grill.
Thread the lamb on skewers, pushing the pieces close together.
Grill the lamb directly over the coals 3-4 minutes on each
side for medium rare. Serve on top of Salad with Vinaigrette.
