Salad with Vinaigrette
(Serves 4)
Ingredients
6 cups mixed salad greens
Chopped scallions
Blanched green beans
Sliced cucumbers
Tomatoes (cherry or vine-ripened)
Sliced radish
Greek olives
Fresh oregano; mint leaves
Preparation
Combine salad ingredients in a large bowl, toss with vinaigrette (recipe to follow). Serve immediately with Lamb Brochettes.

Vinaigrette
Ingredients
1/2 cup olive oil
1/4 cup red wine vinegar
2 teaspoons minced garlic
2 teaspoons fresh oregano leaves chopped, or 1 teaspoon
dried
A pinch each: cumin, coriander, curry, salt and ground pepper
to taste
Preparation
Add dressing ingredients to a small bowl. Whisk until well blended. Adjust the seasonings to taste. Pour over salad, toss and serve immediately.
