Cajun Catfish Fingers

          ( Makes about 25 pieces )

 

Ingredients

 

Vegetable oil for deep frying
2 large eggs, beaten
1/2 teaspoon garlic powder
1/2 teaspoon seafood seasoning
1 teaspoon Worcestershire sauce
1/8 teaspoon hot pepper sauce
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon ground black pepper
3/4 cup yellow cornmeal
1/4 teaspoon salt
1 1/2 pounds catfish fillets, cut into strips 1 inch wide
Spicy Cajun Dip (see recipe)


 

Preparation

 

Heat the oil to 350 F. in a deep skillet or electric fryer. In a medium-size bowl, whisk together the eggs, garlic powder, seafood seasoning, Worcestershire, hot pepper sauce, oregano, thyme and black pepper. Mix the cornmeal and salt together in a shallow dish. Dip the catfish strips into the egg mixture and then into the cornmeal mixture to thoroughly coat them.

 

Fry the fish fingers for about 5 minutes or until golden brown. Remove them with a slotted spoon and drain on paper towels. Serve immediately with Spicy Cajun Dip alongside.
