Curried Grilled Butterflied Cornish Hens

                                      (Serves 12)

 

Ingredients


4 Cornish hens (1 1/2 lbs each) split in half

 

Marinade


1 cup chopped onion
1 cup non-fat plain yogurt
2 tablespoons curry powder
2 tablespoons vegetable oil
1 tablespoon grated ginger root
2 cloves garlic, minced
3/4 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper







 

Preparation

 

In large plastic food storage bag, mix all marinade ingredients. Add hens; turn to coat with marinade. Refrigerate at least 3 hours or up to 12 hours; turn occasionally.

 

Prepare outdoor grill with medium hot coals or preheat broiler. Remove hens from bag; discard marinade. Oil grill rack or broiler rack. Grill or broil hens 4 to 6 inches from heat, 35 minutes, turning 4 times until lightly charred and no longer pink near bone.

 

Remove hens to serving platter.
