Champagne Cocktails

                          (Serves 4)

CLASSIC CHAMPAGNE COCKTAIL

Ingredients

1 cube sugar
Splash of Angostura bitters
Splash of cognac

Preparation

Pour bitters onto sugar cube in a Champagne flute.
Add cognac, then pour Champagne in gently.
Note: Sparkling cider can be substituted, for a nonalcoholic cocktail

BELLINI COCKTAIL

Ingredients

Prosecco (a light sparkling Italian wine,
an affordable option to Champagne)
Peach nectar or fresh peach juice

Preparation

Fill a cocktail glass half full with peach nectar or fresh peach juice, then add Prosecco.

KIR ROYALE

Ingredients

1/2 teaspoon raspberry liqueur
1/2 teaspoon Kirsch (cherry liqueur)

Preparation

Pour the liqueurs into a tall cocktail glass, then fill the glass with Champagne.
Garnish with raspberries.

Note: Could dust rim with pink sugar for an extra touch of romance...

ROSÉ CHAMPAGNE WITH BERRIES

Ingredients

4 ounces rosé Champagne
Finely chopped strawberries
Raspberries and blackberries

Preparation

Place fruit in a flute and pour in rosé Champagne.
